Holy wow. I made Kenji’s lighter Fettuccine Alfredo tonight and it was so so awesome.
I only made a half batch - so I subbed skim milk and cut the butter, cheese, and oil in half, but used a whole egg and I added roasted cherry tomatoes.
Are you roasting your cherry tomatoes? You should be.

Pan sear pork (or whatever meat) a la this recipe loosely. While meat is resting, drain most of oil/fat off, add mandolin-ed apple and summer squash, salt and splash of white wine, cook on high, stirring frequently and deglazing pan til veggies are wilted.
